- 1 whole chicken (about 4–5 pounds)
- 1 tablespoon olive oil
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 cup chicken broth
- Fresh herbs (such as rosemary or thyme) for flavor (optional)
Instructions
- Pat the whole chicken dry with paper towels. Rub olive oil all over the chicken.
- In a small bowl, mix together salt, pepper, garlic powder, onion powder, and smoked paprika. Rub this spice mixture all over the chicken, including under the skin for maximum flavor.
- Pour the chicken broth into the Instant Pot and place the trivet inside.
- Carefully place the seasoned chicken on the trivet, breast side up.
- Secure the lid and set the valve to sealing. Cook on manual high pressure for 6 minutes per pound. For a 4-pound chicken, set the timer for 24 minutes.
- Once cooking is complete, allow for a natural pressure release for 15 minutes, then perform a quick release to release any remaining pressure.
- Carefully remove the chicken from the pot and let it rest for 10 minutes before carving.
Notes
For extra flavor, consider adding lemon slices and garlic cloves inside the cavity of the chicken before cooking. This chicken can also be shredded for salads or sandwiches!
