Description

A fresh and tangy carrot salad tossed with fresh herbs and a zesty Dijon vinaigrette. This healthy dish is perfect for a light lunch or as a side salad to complement any meal


Ingredients

  • 4 large carrots, peeled and grated

  • 1/4 cup fresh parsley, chopped

  • 2 tbsp fresh cilantro, chopped

  • 1 tbsp fresh mint, chopped

  • 2 tbsp Dijon mustard

  • 2 tbsp red wine vinegar

  • 1/4 cup olive oil

  • Salt and pepper, to taste

  • Add each ingredient one by one.


Instructions

  • n a large bowl, combine the grated carrots, parsley, cilantro, and mint.
  • In a small bowl, whisk together the Dijon mustard, red wine vinegar, olive oil, salt, and pepper until smooth.
  • Pour the dressing over the carrot mixture and toss to combine.
  • Serve immediately or refrigerate for 30 minutes to let the flavors meld

Notes

  • You can make the salad ahead of time and let it chill in the fridge for a more intense flavor.

  • Adjust the dressing by adding more mustard or vinegar for an extra kick
