Ingredients
4 large carrots, peeled and grated
1/4 cup fresh parsley, chopped
2 tbsp fresh cilantro, chopped
1 tbsp fresh mint, chopped
2 tbsp Dijon mustard
2 tbsp red wine vinegar
1/4 cup olive oil
Salt and pepper, to taste
Add each ingredient one by one.
Instructions
- n a large bowl, combine the grated carrots, parsley, cilantro, and mint.
- In a small bowl, whisk together the Dijon mustard, red wine vinegar, olive oil, salt, and pepper until smooth.
- Pour the dressing over the carrot mixture and toss to combine.
- Serve immediately or refrigerate for 30 minutes to let the flavors meld
Notes
You can make the salad ahead of time and let it chill in the fridge for a more intense flavor.
Adjust the dressing by adding more mustard or vinegar for an extra kick
