- 4 bone-in chicken thighs, skin-on
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 2 apples, cored and sliced (preferably a sweet variety like Fuji or Honeycrisp)
- 1 tsp dried thyme
- 1 tsp dried rosemary
Instructions
- Season chicken thighs with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat. Sear chicken thighs skin-side down until golden brown, about 5-7 minutes. Flip and sear for another 5 minutes. Remove and set aside.
- In the same skillet, add onion and garlic, sautéing until softened.
- Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Add sliced apples, thyme, and rosemary.
- Return chicken thighs to the skillet, skin-side up. Bring to a simmer, cover, and reduce heat to low. Cook for 30-35 minutes, or until chicken is tender and cooked through.
- Serve hot, spooning the apple mixture over the chicken.
