These savory braised chicken thighs with apples create a comforting and flavorful dish, combining tender chicken with sweet, caramelized apples for a perfect weeknight meal.


Ingredients

  • 4 bone-in chicken thighs, skin-on
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 2 apples, cored and sliced (preferably a sweet variety like Fuji or Honeycrisp)
  • 1 tsp dried thyme
  • 1 tsp dried rosemary

Instructions

  • Season chicken thighs with salt and pepper.
  • In a large skillet, heat olive oil over medium-high heat. Sear chicken thighs skin-side down until golden brown, about 5-7 minutes. Flip and sear for another 5 minutes. Remove and set aside.
  • In the same skillet, add onion and garlic, sautéing until softened.
  • Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Add sliced apples, thyme, and rosemary.
  • Return chicken thighs to the skillet, skin-side up. Bring to a simmer, cover, and reduce heat to low. Cook for 30-35 minutes, or until chicken is tender and cooked through.
  • Serve hot, spooning the apple mixture over the chicken.
