- 4 large bell peppers (any color)
- 1 cup cooked rice (white or brown)
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn (canned or frozen)
- 1 cup diced tomatoes (canned or fresh)
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1 cup shredded cheese (cheddar or Mexican blend)
- Salt and pepper to taste
- Fresh cilantro or parsley, for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.
- In a large bowl, combine the cooked rice, black beans, corn, diced tomatoes, cumin, chili powder, garlic powder, and half of the cheese. Season with salt and pepper.
- Stuff the mixture into each bell pepper, pressing down gently. Top with the remaining cheese.
- Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese is bubbly.
- Garnish with fresh cilantro or parsley before serving.
