This roasted carrot dish combines the sweetness of candied pecans with the tangy creaminess of goat cheese, creating a perfect balance of flavors ideal for any dinner spread.


Ingredients

  • 1 lb carrots, peeled and sliced lengthwise
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1/2 cup candied pecans
  • 1/4 cup crumbled goat cheese
  • 1 tbsp fresh thyme leaves (optional)

Instructions

  • Preheat oven to 400°F (200°C).
  • Arrange carrots on a baking sheet, drizzle with olive oil, and season with salt and pepper.
  • Roast for 20-25 minutes, or until the carrots are tender and caramelized.
  • Remove from the oven, top with candied pecans, crumbled goat cheese, and fresh thyme if desired. Serve warm.

Notes
