- Salt and pepper to taste
- 1/2 cup candied pecans

Instructions
- Preheat oven to 400°F (200°C).
- Arrange carrots on a baking sheet, drizzle with olive oil, and season with salt and pepper.
- Roast for 20-25 minutes, or until the carrots are tender and caramelized.
- Remove from the oven, top with candied pecans, crumbled goat cheese, and fresh thyme if desired. Serve warm.
Notes
