This healthy spinach lasagna is a delightful twist on the classic dish, packed with layers of fresh spinach, ricotta, and marinara sauce. It’s a nutritious and satisfying meal that the whole family will love, perfect for any occasion.


Ingredients

  • 9 whole wheat lasagna noodles
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 cups marinara sauce (store-bought or homemade)
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  • Preheat your oven to 375°F (190°C).
  • Cook the whole wheat lasagna noodles according to package instructions; drain and set aside.
  • In a large bowl, mix the ricotta cheese, egg, garlic powder, Italian seasoning, salt, and pepper until well combined.
  • In a baking dish, spread a thin layer of marinara sauce on the bottom.
  • Place 3 lasagna noodles over the sauce, then spread half of the ricotta mixture over the noodles.
  • Add half of the chopped spinach and a third of the mozzarella cheese.
  • Repeat the layering process: another layer of marinara sauce, 3 more noodles, the remaining ricotta mixture, the remaining spinach, and another third of the mozzarella.
  • Finish with the last 3 noodles, the remaining marinara sauce, and top with the remaining mozzarella and Parmesan cheese.
  • Cover the baking dish with aluminum foil and bake for 25 minutes.
  • Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.
  • Let the lasagna cool for a few minutes before slicing. Garnish with fresh basil if desired and serve.

Notes

 

Feel free to add other vegetables like mushrooms or zucchini for extra nutrition. You can also substitute the ricotta with cottage cheese for a lighter option.
