Ingredients

- 2 lobsters (about 1.5 lbs each)
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/4 cup brandy
- 4 cups fish or lobster stock
- 1 cup heavy cream
- 1/2 tsp saffron threads
- Salt and pepper to taste
- Fresh chives, chopped (for garnish)
Instructions
- In a large pot, heat olive oil over medium heat. Add onion and garlic, cooking until softened.
- Add brandy and let it simmer briefly, then add the lobster shells and cook for a few minutes.
- Pour in the fish stock and simmer for 20 minutes to develop flavor.
- Remove the shells and blend the soup until smooth.
- Return the bisque to the pot, add cream, and stir in saffron. Simmer for another 10 minutes.
- Season with salt and pepper, garnish with chives, and serve hot.
Notes
For an extra smooth bisque, strain the soup after blending. You can also reserve a small amount of lobster meat for garnish.
