Description

Indulge in the luxurious flavors of this lobster bisque infused with saffron, offering a rich, creamy texture and a touch of elegance perfect for special occasions.


Ingredients

Scale
  • 2 lobsters (about 1.5 lbs each)
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup brandy
  • 4 cups fish or lobster stock
  • 1 cup heavy cream
  • 1/2 tsp saffron threads
  • Salt and pepper to taste
  • Fresh chives, chopped (for garnish)

Instructions

  • In a large pot, heat olive oil over medium heat. Add onion and garlic, cooking until softened.
  • Add brandy and let it simmer briefly, then add the lobster shells and cook for a few minutes.
  • Pour in the fish stock and simmer for 20 minutes to develop flavor.
  • Remove the shells and blend the soup until smooth.
  • Return the bisque to the pot, add cream, and stir in saffron. Simmer for another 10 minutes.
  • Season with salt and pepper, garnish with chives, and serve hot.

Notes

For an extra smooth bisque, strain the soup after blending. You can also reserve a small amount of lobster meat for garnish.
