    • 1 tablespoon olive oil
    • 8 ounces mushrooms, chopped
    • 2 cups fresh spinach, chopped
    • 2 cloves garlic, minced
    • 1/2 cup cream cheese, softened
    • 1/4 cup grated Parmesan cheese
    • Salt and pepper to taste
    • 1/2 teaspoon dried thyme (optional)
  • For the Chicken:

    • 4 boneless, skinless chicken breasts
    • Salt and pepper to taste
    • 1 tablespoon olive oil (for cooking)
    • 1/2 cup chicken broth (for baking)

Instructions

  • Prepare the Stuffing:

    • In a skillet over medium heat, heat olive oil and add chopped mushrooms. Sauté until they are browned, about 5-7 minutes.
    • Add minced garlic and chopped spinach to the skillet, cooking until the spinach is wilted. Remove from heat.
    • In a bowl, combine the sautéed mushrooms and spinach with cream cheese, Parmesan cheese, salt, pepper, and thyme (if using). Mix until well combined.
  • Prepare the Chicken:

    • Preheat the oven to 375°F (190°C).
    • Butterfly each chicken breast by slicing it horizontally, creating a pocket for the stuffing.
    • Season the inside and outside of each chicken breast with salt and pepper.
  • Stuff the Chicken:

    • Fill each chicken breast pocket with the mushroom and spinach mixture, securing with toothpicks if necessary.
  • Cook the Chicken:

    • In an oven-safe skillet, heat olive oil over medium-high heat. Add the stuffed chicken breasts and sear for 4-5 minutes on each side until golden brown.
    • Pour chicken broth into the skillet and transfer to the preheated oven. Bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  • Serve:
