Ingredients
For the Stuffing:
- 1 tablespoon olive oil
- 8 ounces mushrooms, chopped
- 2 cups fresh spinach, chopped
- 2 cloves garlic, minced
- 1/2 cup cream cheese, softened
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- 1/2 teaspoon dried thyme (optional)
For the Chicken:
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 tablespoon olive oil (for cooking)
- 1/2 cup chicken broth (for baking)
Instructions
Prepare the Stuffing:
- In a skillet over medium heat, heat olive oil and add chopped mushrooms. Sauté until they are browned, about 5-7 minutes.
- Add minced garlic and chopped spinach to the skillet, cooking until the spinach is wilted. Remove from heat.
- In a bowl, combine the sautéed mushrooms and spinach with cream cheese, Parmesan cheese, salt, pepper, and thyme (if using). Mix until well combined.
Prepare the Chicken:
- Preheat the oven to 375°F (190°C).
- Butterfly each chicken breast by slicing it horizontally, creating a pocket for the stuffing.
- Season the inside and outside of each chicken breast with salt and pepper.
Stuff the Chicken:
- Fill each chicken breast pocket with the mushroom and spinach mixture, securing with toothpicks if necessary.
Cook the Chicken:
- In an oven-safe skillet, heat olive oil over medium-high heat. Add the stuffed chicken breasts and sear for 4-5 minutes on each side until golden brown.
- Pour chicken broth into the skillet and transfer to the preheated oven. Bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Serve:
- Remove the toothpicks and let the chicken rest for a few minutes before slicing. Serve warm with your choice of sides.
