- 1 cup cooked couscous
- 1 can (5 oz) tuna, drained
- 1/4 cup breadcrumbs
- 1 egg
- 2 tablespoons chopped parsley
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Olive oil for frying
Instructions
- In a large bowl, combine couscous, tuna, breadcrumbs, egg, parsley, and lemon juice. Season with salt and pepper.
- Mix until well combined and form the mixture into small patties.
- Heat a skillet over medium heat with a drizzle of olive oil.
- Cook the patties for 3-4 minutes on each side, or until golden brown.
- Serve warm with a dipping sauce or as a side.
Notes
For a gluten-free version, use gluten-free breadcrumbs. These patties can be baked instead of fried for a lighter option.
