- 1 cup orzo pasta
- 2 cups diced sweet potato
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 cup cooked salmon, flaked
- 1/4 cup feta cheese, crumbled
- 2 cups mixed greens
- 1/4 cup cherry tomatoes, halved
- 2 tbsp fresh parsley, chopped
Instructions
- Preheat oven to 400°F (200°C). Toss sweet potatoes with olive oil, salt, and pepper. Roast on a baking sheet for 20-25 minutes, or until tender and slightly browned.
- Cook orzo pasta according to package instructions. Drain and let cool.
- In a large bowl, combine roasted sweet potatoes, cooked orzo, flaked salmon, feta cheese, mixed greens, cherry tomatoes, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper. Pour over the salad and toss to combine.
- Serve immediately or refrigerate until ready to enjoy

Feel free to substitute spinach or arugula for the mixed greens, and add your favorite vegetables for extra color and flavor.
