Description

This hearty salad combines tender salmon, roasted sweet potatoes, and orzo for a nutritious and flavorful dish that’s perfect for a light lunch or dinner.


Ingredients

  • 1 cup orzo pasta
  • 2 cups diced sweet potato
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 cup cooked salmon, flaked
  • 1/4 cup feta cheese, crumbled
  • 2 cups mixed greens
  • 1/4 cup cherry tomatoes, halved
  • 2 tbsp fresh parsley, chopped

Instructions

  • Preheat oven to 400°F (200°C). Toss sweet potatoes with olive oil, salt, and pepper. Roast on a baking sheet for 20-25 minutes, or until tender and slightly browned.
  • Cook orzo pasta according to package instructions. Drain and let cool.
  • In a large bowl, combine roasted sweet potatoes, cooked orzo, flaked salmon, feta cheese, mixed greens, cherry tomatoes, and parsley.
  • In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper. Pour over the salad and toss to combine.
  • Serve immediately or refrigerate until ready to enjoy

Notes

Feel free to substitute spinach or arugula for the mixed greens, and add your favorite vegetables for extra color and flavor.
