Ingredients

Kofta:
- 1 lb ground lamb
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp fresh parsley, chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- Salt and pepper to taste
Curry Sauce:
- 1 tbsp olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 tbsp curry powder
- 1/2 tsp turmeric
- 1/2 tsp ground cumin
- 1 cup coconut milk
- 1/2 cup chicken broth
- Salt and pepper to taste
Mint Yogurt:
- 1 cup plain yogurt
- 2 tbsp fresh mint, chopped
- Salt to taste
Instructions
- In a bowl, combine all ingredients for the kofta and mix until well combined. Form into small meatballs.
- Heat olive oil in a skillet over medium heat. Cook kofta until browned on all sides. Remove from skillet and set aside.
- In the same skillet, add chopped onion, garlic, and ginger, cooking until softened.
- Stir in curry powder, turmeric, and cumin, cooking until fragrant.
- Pour in coconut milk and chicken broth. Bring to a simmer, then add the kofta back into the skillet. Cook for 15-20 minutes until the sauce thickens and kofta are fully cooked.
- In a small bowl, combine yogurt and mint for the mint yogurt sauce. Serve with the kofta curry
Notes
For a spicier dish, add a pinch of cayenne pepper to the curry sauce. Serve with basmati rice or naan.
