- 1 lb large shrimp, peeled and deveined
- 1 cup stone-ground grits
- 2 cups chicken broth
- 1 cup milk
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon chili flakes (optional for heat)
- Salt and pepper to taste
- 2 green onions, sliced (for garnish)
- Fresh cilantro (for garnish)
Instructions
- In a medium saucepan, bring the chicken broth and milk to a simmer. Stir in the grits and cook according to package instructions until creamy. Stir in butter, salt, and pepper to taste. Keep warm.
- Heat sesame oil in a large skillet over medium-high heat. Add the shrimp, season with salt and pepper, and cook for 2-3 minutes per side, until pink and opaque. Remove shrimp from the skillet and set aside.
- In the same skillet, add garlic and ginger. Cook for 1 minute until fragrant. Stir in soy sauce, rice vinegar, and chili flakes. Simmer for 2 minutes to combine flavors.
- Return shrimp to the skillet and toss to coat in the sauce. Cook for another minute, then remove from heat.
- Serve the shrimp mixture over the creamy grits and garnish with green onions and cilantro.
Notes
For a spicier dish, increase the chili flakes or add a drizzle of sriracha sauce. You can substitute coconut milk for a richer, creamier texture in the grits.
