Ingredients

  • 6 large eggs
  • 1/4 cup milk
  • Salt and pepper to taste
  • 1/2 cup bell pepper, diced
  • 1/2 cup spinach, chopped
  • 1/4 cup onion, diced
  • 1/4 cup shredded cheese (optional)
  • 1 tbsp olive oil

Instructions

  • Preheat oven to 375°F (190°C).
  • In a mixing bowl, whisk together eggs, milk, salt, and pepper until well combined.
  • In an oven-safe skillet, heat olive oil over medium heat. Add bell pepper, spinach, and onion, cooking until softened.
  • Pour egg mixture into the skillet, stirring gently to distribute vegetables evenly. Sprinkle cheese on top, if using.
  • Transfer skillet to the oven and bake for 10-12 minutes, or until eggs are set and lightly browned on top.
