- 1/4 cup milk

- 1/2 cup bell pepper, diced
- 1/2 cup spinach, chopped
- 1/4 cup onion, diced
- 1/4 cup shredded cheese (optional)
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- In a mixing bowl, whisk together eggs, milk, salt, and pepper until well combined.
- In an oven-safe skillet, heat olive oil over medium heat. Add bell pepper, spinach, and onion, cooking until softened.
- Pour egg mixture into the skillet, stirring gently to distribute vegetables evenly. Sprinkle cheese on top, if using.
- Transfer skillet to the oven and bake for 10-12 minutes, or until eggs are set and lightly browned on top.
- Slice and serve warm.
